When Martin Wishart contacted MD Judith Tatham to say he was going into a new venture at Malmaison in Glasgow and would very much like to work with the R H Morton team again, it was testament to his confidence that the kitchen would be one thing he would not have to worry about in his first move into a well established hotel chain.

The space was not easy with many divided areas, nooks and crannies and a great need to maximise every possible inch of space to meet the needs of a busy Brasserie operation coupled with servicing the hotel guests at Breakfast, for Room Service and Private Dining.

Once again Michelin Chef, Martin chose Charvet 900 Series for a centre island cooking suite with a combination of Open and Solid Burners with Ovens under, a Pasta Cooker, Fryers and Planchas.

The Plancha is a combination of simplicity and efficiency being increasingly used in top end kitchens today for direct cooking, through contact with a smooth surface. It is made of extra-thick cast iron or chromium steel, enabling uniform heat distribution and accurate temperature control. Charvet planchas are unrivalled in quality, thanks to their seamless welded tops, peripheral juice collectors and grease trays.
