Proprietor David Ibbotson invited R H Morton to design and install a brand new kitchen, and working with Head Chef Tony Pierce the choices were made to use Charvet 800 Series LP Gas Ranges and Salamander, a Blue Seal Turbofan Baking Oven and Prover, a Winterhalter Pass-through Dishwasher and a water bath was incorporated into Morton’s fabrication which included the dishwash area, a new hot pass, fish sink large enough to deal with the largest local fish which arrive daily. The package included new kitchen flooring and came on on time and on budget.
With fine dining being produced at an exceptional level, the emphasis is on locally sourced produce, vegetable, salad and herbs from the kitchen garden, freshly baked bread, cakes, desserts and home made marmalade and jam – definitely a destination hotel of the highest calibre, with a kitchen to match.
