Brian Maule moved from being Head Chef for Michel Roux Jr at Le Gavroche with two Michelin Stars, to fulfilling his lifelong dream of opening his own restaurant in West Regent Street, Glasgow.
Brian approached R H Morton to design a brand new kitchen facility to facilitate Private Dining and provide much more space for preparation, they were delighted to work with him to achieve exactly what he wanted. RH Morton worked to a tight budget: Garland were the choice of ranges, Blue Seal Turbofan for baking, a Porkka coldroom, Gram refrigerated counters with Morton tops to match all the upstands, and Winterhalter for the Dishwasher with R H Morton manufacturing and templating all the stainless steel fabrication to fit.
To this day he holds the record in the Morton Design Department for the number of “re-draws” on the design, but Chef-Proprietors at this level are extremely particular about every inch of space in their kitchens and as bespoke manufacturers, R H Morton is equally committed to detail – this makes for a very successful outcome.
