The central island cooking suite of heavy-duty Falcon Chieftain equipment was plinth mounted (very common in large London hotels but almost unheard of in Scotland). The kitchen had its first introduction to combi-ovens and pressure steamers. The entire servery was designed to separate the kitchen staff from the waiting staff, incorporating a large run of servery with refrigerated counters and gas bain marie / hotcupboards. These had doors to both sides, allowing plates returning from the wash-up area to be stocked and retrieved by the chefs on the opposite sides. Two-tier heated gantries above maximised the plating-up storage.
The hi-tec wash-up area incorporated magnetic scrapping collars and an automatic waste disposal unit trough with all undercounter storage utilised fully by incorporating base and midshelves and basket runners.
Suffice to say, the deadlines on the project were duly met, not a function was missed and The Seamill Hydro and Mortons continue their excellent relationship.
